I followed this guide to the T http://library.linode.com/email/postfix/dovecot-mysql-ubuntu-10.04-lucid

And everything seems to be in order based on the log files. I then decided to install ISPconfig 3.0 and I didn't really expect any of the email addresses and such to show up there. How can I manage what I already created using that guide in ISPconfig?

Your best bet is to install ISPconfig (or any other control panel) first, before doing any configuration. Once you install a control panel, you must use it to configure your system, and it will either destroy any configuration previously done or leave it in an awkward state.

So, short answer: Rebuild your Linode, install ISPconfig, and then set up what you need using ISPconfig's documentation and not Linode's documentation. (Or don't install ISPconfig.)
