Would linode be a solution if I wanted to setup a video server where people can iupload videos and I can stream them..something like youtube? How much traffic would a Linode 600 reasonable serve as compared to Linode 1200. How much Ram would I need for say 100 concurrent users?

A dedicated server, unless you get the 1200 you'll quickly run out of bandwidth, and space.
