I would just like to be sure I am clear on the way memory is allocated to each linode - for the 360 plan, do I really get 360 MiB of memory guaranteed 24/7, or is there a chance my server might not be able to allocate that due to sharing/etc at some point?

You will always have 360 MiB available - it is not shared with other Linodes on the host.
