You update it in the configuration profile in the linode manager:
1) Log into the linode manager (
https://manager.linode.com/)
2) Select your linode
3) Next to the currently active profile in the dashboard, which by default I think is something like "My Ubuntu 10.04 Profile", click "Edit"
4) Under "Boot Settings", select "Latest 3.0 (3.0.18-linode43)" in the Kernel dropdown
5) Save your changes. The new kernel selection will take effect the next time the linode reboots. Linode will periodically update the kernel, and all you'll have to do to take advantage of that is reboot again.
I'm not sure if the "Latest" option will get updates to later 3.x releases (3.x changed the version numbering scheme, 3.2 -> 3.3 would now be the equivalent to 2.6.2 -> 2.6.3), or if it will only get the minor releases (which tend to be security fixes).
