Would it be possible to have means to order disk images in our linode dashboard according to our wishes? Not talking about assigning them to profile, I know that's possible, just to have them sorted in web interface the way I want them sorted.

You're fastidious How many disk images do you have?

If it really hurts your eyes to see disk images out of order, here's a quick and dirty solution. Clear some disk space on your linode, and clone each of your images in the order you want them to be sorted. After each cloning, delete the original to make space for a clone of the next one.

DISCLAIMER: You are likely to delete the wrong disk image while doing this. Don't blame me if this happens.

Since you can change the displayed name of the image, add '001', '002',etc in front of the existing names. Something like that might work.
