Should I ignore kernel updates, since Xen is providing the kernel?

From Yum

An update to kernel from 2.6.18-164.11.1.el5 to 2.6.18-164.15.1.el5 is available.

An update to kernel-headers from 2.6.18-164.11.1.el5 to 2.6.18-164.15.1.el5 is available.

I don't think I have a good understanding of Xen and kernel.

First post! Be nice! :)

By default, linode provides the kernel.

So should I setup yum to skip or let the update run because it's not really going effect anything?

Assuming you're not doing pv-ops, which you're not by default, then it doesn't really matter what you do with the kernel on your node. It'll be ignored.

Not entirely correct -- it doesn't matter if you're using one of Linode's pv-ops kernels, either. It only matters when you set up pv-grub.
